Ghee Rice / Naychoru

                      Holidays come very rarely in Dubai. If it was back in Kerala we could spend each working day hoping for a Harthal or a strike as a surprise gift. These Harthals boost our interest to go to school / College next day. When I was in college we had a lot of opportunity to celebrate SFI strikes. Whenever there was a rumor of strike in College, we knew the strike members will come and suspend our classes. But still we would go to the class that day also to pretend the teachers, "we girls, LIKE classes". We would sit in our teacher's class alert and our eyes wide open on our teacher's face (She had no idea of this rumor and she thinks we are great listeners) . But our ears were not on her words, it was searching for the echo of the slogans the Union members would chant when they come to our Department. Again we give a helpless look on teacher's face as if we had no idea and not our mistake and with jumping hearts we jump out of the class and go straight for our leisure activities. And that was the fun !!
           Talking about holidays, Dubai give only friday as a public holiday and we celebrate it by some biryani or any heavy luncheons. And on some fridays, Ghee rice plays the role of queen where the king is played by chicken or any non veg curry. Most people know how to make it as its quite easy but still I am posting this because I know there must be at least someone (like how I was before) who doesnt know. So am helping out for her...!

ghee rice                     

Ingredients :
  1. Jeerakashala Rice : 1 cup 
  2. Ghee : 1/2 cup
  3. Onion Small sized : 1 ; finely sliced
  4. Water : 2 cups
  5. Cashew nuts : 6-7 ; chopped
  6. Raisins : 5-6
  7. Green Cardamom : 2
  8. Cloves : 7-8
  9. Bay Leaf : 1
  10. Peppercorns : 3-4
  11. Cinnamon Stick : 2 inch , halved

Method :
  1. Wash rice and soak it in water for 5-10 min. Drain after that
  2. Place water in a pan and let it boil
  3. While water takes time to boil, heat Ghee in a large non-stick pan
  4. Roast Cashew nuts until they turn golden brown. Take them out and add raisins. Take these raisins out after they bulges
  5. Add the spices listed from 6 to 10. 
  6. After this add onion and saute until they turn transparent.
  7. Add rice on to this and saute for few minutes.
  8. Add 1.5 cups water and salt. 
  9. Cover with lid and let it cook with lower flame.
  10. After 10-15 min, check the rice, if water has completely gone and rice not yet cooked, add the remaining boiled water. Check salt also.
  11. When rice gets cooked add cashew nuts and raisins and serve.
Note :
  • Jeerakashala Rice is a small sized rice used for making especially ghee rice.
