Mutta Maala

Mutta Maala came from the northern Malabar regions of Kerala. Mutta means egg and Maala means garland. As heard from my Kannur friends, some parts of Kannur has the tradition of grooms staying in the bride's house and eventually women in Kannur started preparing numerous delicious snacks and meals. Many of these have Eggs as their main ingredient and for this recipe, its a 'Sorry' for my vegetarians readers. I recommend this as a quick and easy one when someone unexpectedly knocks your door .

Ingredients :
  1. Eggs : 6-7
  2. Sugar : 1 cup
  3. Water : 2 cup
Utensils required :
  1. Disposable glass or coconut shell : one

Method :

  1. Separate egg whites and keep them separately. This is later used for making Mutta Surka.
  2. Make sure egg yolks separated shouldnt contain any drop of egg white or water. It should be pure.
  3. Make a hole in the disposable glass or coconut shell. You can also use egg shell. I used a disposable glass.
  4. Take a wok and add sugar and water in it. Heat the pan with medium-high flame. It will start bubbling.
  5. Dip a spoon and take out. If the syrup falls in the form of thin strings, then the syrup has reached the exact consistency. Do not turn off the flame as the syrup will thicken up.
  6. Now hold the glass with one finger covering the hole. Fill the glass with the egg yolk.
  7. Through the hole in the glass pour this egg yolk onto the sugar syrup by opening the finger. While pouring try to swirl around to form a net. Let it cook for 2-3 min. And take them out to a serving plate. Finish off the remaining egg yolk
