Chicken Fried rice

                       
  

                           If you have gone through my About Me you would have realized that I started into cooking very suddenly and only few months before. For some reason it is a Chicken Fried Rice that changed my life. One day, we had been invited to a birthday party of my relative and there was something which completely changed myself. There were almost more than 20 guests and the unbelievable thing was that the hostess who had a small baby cooked herself for the dinner party. The dining table was crowded with many dishes..  IdiyappamPathiri , Puri , Fried Rice , Beef Curry , Chilli Chicken, Chicken Manjurian ... All of us were stunned and that was the day I realized I newer knew anything about cooking. Next day I rolled up my sleeves and started to find out the exact meaning of 'Cooking'. And then there was no looking back ( though sometimes I turn up lazy) . 
                          Like said it was Fried rice that I first cooked something with lots of PASSION and that credit goes to my then hostess. This recipe is inspired from Shab's Cuisine and Will-O'-the-Wisp . Check out both of their recipes ..

Ingredients :

  1. Basmati Rice : 11/2 cup
  2. Medium Onion : 1 ; chopped
  3. Ginger- garlic paste : 2 tbsp
  4. Carrot : 1 medium; cut into small cubes
  5. French beans : 10 pieces; chopped
  6. Green peas : 1/4 cup
  7. Soy Sauce : 4 tsp  & 1 tbsp
  8. Chilli Sauce : 4-5 tsp
  9. Pepper Powder : 2 tbsp 
  10. Egg : 1 beaten
  11. Minced Chicken ( Not cooked): 1/4 - 1/2 cup 
  12. Celery : 1/4 cup chopped
  13. Spring Onion : 4- 5 stalks ; chopped
  14. Home made Chilli Oil : Take 2-3 dried chilli in a bowl. Heat oil in a pan and when the oil is smoking hot, pour this over the dried chillies and let it cool. After 10-15 min, press and mash the chilli well . Discard the solid stuff.

Method :

  1. In a large pan, bring plenty of water to boil. Add salt, 1 tbsp soy sauce and rice. Cook uncovered until grains are soft and separable. Make sure not to overcook. Drain the cooked rice into a strainer and run cold water over it to prevent from further cooking.
  2. You need to take a large wok for cooking fried rice. Heat the wok and add 3-4 tbsp of oil. Into this add onion and ginger garlic paste and saute until soft. Add carrot and mix well until the carrots are cooked. Add beans and peas and saute until just cooked. Add 2 tsp soya sauce and chilli sauce
  3. To the same wok add beaten eggs and scramble it. Add pepper powder.
  4. Add celery and spring onion and saute. The celery will give the taste of ajinomoto
  5. Add minced chicken, remaining pepper powder, 2 tsp soy sauce, chilli sauce and little water to get the chicken cooked. 
  6. Add the cooked rice when the chicken is cooked and mix well for 2-3 min until the rice gets heated up . 
  7. Sprinkle Chilli oil over it and serve with any Chinese Side Dish
