Leafy Chicken Sandwich



Spinach-Chicken- Sandwich


                         This is a healthy bread sandwich perfect for kids who mostly hate spinach. Spinach , as everyone know is very much rich in nutrients. I usually make sure that our weekly diet contains spinach  or any other leafy vegetable atleast once . This time I had some few chicken left and few spinach left when suddenly I was reminded of a recipe in a cookbook I got from store. Yup! there was this recipe using these ingredients and I fastened to my kitchen to start my battle.

Spinach-Chicken- Sandwich

Ingredients :

  1. Bread slices : 8-10 
  2. Minced uncooked chicken : 3/4 cup
  3. Spinach chopped : 1 cup ( it will shrink when cooked )
  4. Onion chopped : 1 tbsp
  5. Green Chillies chopped : 1/2 tsp
  6. Ginger chopped : a pinch
  7. Turmeric powder : a pinch
  8. Pepper powder : a pinch
  9. Garam Masala : a pinch
  10. Coriander leaves chopped : 1 tsp (optional )
  11. Oil : 2-3 tbsp
  12. Water : 1/4 cup
  13. Salt : as required

Spinach-Chicken- Sandwich

Method :

                     Heat oil in a pan. When hot, add onion, green chillies, ginger and saute until onion is transparent. Put turmeric powder, pepper powder,garam masala and saute again for few more minutes. Add the minced chicken and salt and 1/4 cup water and let it cook covered with lid. When the water gets fully absorbed after sometime, add spinach and mix well for sometime again. Your filling is ready. Now place them between two bread and serve them to your kids. You can also toast the bread in butter before filling.
