Onion- Cauliflower Bhaji


                      Is there anyone among us who doesnt know how to prepare Ulli Bhaji or Onion Bhaji ? Am sure every mothers in Kerala must have prepared this atleast once for their kids.  But I hardly loved these. I like it when prepared with less batter and lots of onion like this. My onion bhaji will look like this then. When batter is thin, bhaji becomes crispy. Today , I have added grated cauliflower also to add a different taste. And it tasted different and thats why I thought of posting this here. I dont like to post recipes which dont turn out well. 

Ingredients :

  1. Onion : 2 , sliced
  2. Grated Cauliflower : 1/2 - 1 cup ( Put cauliflower in boiled water for 10 min and after draining, grate it using a grater as done in Gobi Paratha. Drain water completely ) 
  3. Green Chillies : 2 or 3, chopped
  4. Coriander leaves : chopped, a few
  5. Oil : for deep frying
  6. Gram flour : 1/2 or 1 cup enough to make batter
  7. Chilli Powder : 1 tbsp ( adjust according to spiciness of green chillies )
  8. Turmeric Powder : 1/2 tsp
  9. Water : as per use
  10. Salt : to taste

Method :

              Make the batter using ingredients from 6 to 10. I prefer consistency of batter very thin with lots of onion. It will give a different taste. Now into this add ingredients from 1 to 4. Mix well. Heat Oil in a pan . When hot, using a spoon or ur hands pour 1 or 2 tbsp of the onion-cauliflower mixture into it and deep fry until all sides are brown.

This is the batter thickness for Onion bhaji (without cauliflower). .
