Crunchy Semolina Fritters

                            These days Rava Fritters or Cookies have become my favorite. Sometimes I crave for eating these. Also its quite very easy and quick and tasty. Thats why I feel grateful to the one who gave me the recipe, Shafna. She served us when we visited her house. I had thought it was a ready made mix. But later I asked her how it was made, I was restless to try it myself. Next day I tried and came out well. Why dont you also try it out and let me know!



Crunchy-Semolina-Cookies



Ingredients:

  1. Suji/ Rava : 1 cup
  2. Grated Coconut : 1/2 cup
  3. Sugar : 3-4 tbsp or as per required
  4. Salt : a pinch
  5. Water : As required (See note )
  6. Oil : 4 tbsp

Method :

  1. Roast rava for few minutes and take them out before browning .
  2. Take this in a bowl and add coconut, sugar, salt. Mix well . Now add water little by little until you feel like you can make balls out of it like we do for Kerala Puttu). Dont over pour water. (See note) 
  3. Take a saucepan and add enough for shallow frying. Heat in medium low flame.
  4. Make half a lemon sized balls out of the rava mixture and press or flatten gently with your palms taking care not to break . Try not to make thick. When the oil is hot, put all the prepared rava mixture for shallow frying and wait for 2-3 min. These tend to get burnt very quickly so dont fry for long time and be careful. Keep an eye on the pan .
  5. Flip when one side is golden brown. Wait for 3 min
  6. Take them out nd serve.


Notes :

  • For crispness , use minimum water possible. Also thick fritters are less crispier than thin.
  • Instead of water you can use egg. I have n't tried but I have seen in some recipe from the internet.
