Saffron Rava Kesari

Saffron-Rava-Kesari

                       It was very long when I first tasted this with lots of wonder. I was only 9 or 10 years old. I was in Dubai and one fine evening this neighbor knocked our door . She forwarded her arms with a small packet . And I still remember the color when I opened it. It was pink. Wow! A pink dessert. That was my favorite color back then. She was a Keralite but was brought up from Mumbai and thats why the dessert had a north Indian touch. I was a rava upma hater and thus I hated rava for no reason. But after having those dessert, I started to take some pity on rava. This is such a quick dessert which can be made within 15 mins.  

Ingredients :

  1. Rava / Semolina : 1 cup
  2. Water : 2 cup
  3. Sugar : 1 cup
  4. Saffron threads : a few .
  5. Ghee : 7-8 tbsp
  6. Cashew nuts or broken almonds : as desired quantity

Method :

             From the 2 cup water, boil 2 tbsp of water and keep it aside with saffron strands dipped into it. This is to let the saffron release its aroma and color. In the meantime, add 4 tbsp ghee and roast rava in this. Followingly roast the nuts also in same pan till it turns slight brown. Keep the nuts and rava separately aside. Along with the saffron water, bring 2 cups water to boil in a wok . Now slowly add rava to this and mix well. Let it cook for few minutes. Add sugar into this , at the same time mix it well. Add 2 tbsp ghee and the nuts in the end and let it cook well till the kesari gets thicken. Take out from stovetop and serve cold or hot
