Stuffed Egg Bhaji

                     

                       Again I have borrowed this recipe from a blog I follow. She also has many good recipes . Many of them I have noted down are for Ifthar prep-arable. And here is the link to the original one. With a very small variation I have prepared which is posted down here. Take a look !

Ingredients :

  1. Boiled Eggs : 5-6
  2. Onion : 2 or 3 medium , chopped
  3. Green Chillies : 1 or 2 , chopped
  4. Pepper Powder : 1/2 tsp
  5. Garam Masala : 1/2 tsp
  6. Coriander leaves : chopped finely
  7. Oil : For deep frying
  8. All Purpose flour : 1/2 to 1 cup
  9. Water : enough to make batter
  10. Salt to taste

Method

          After boiling the eggs halven the eggs. Remove the egg yolks into another bowl and crush them. Now in a pan heat 2 tbsp oil .When hot saute onion, then put the green chillies followed by pepper powder, garam masala and salt. Now into this add the removed egg yolks. After mixing for a few minutes add coriander leaves and mix completely and keep it aside. This is the filling keep it aside to cool down. Using a spoon fill the yolk cavity with the prepared filling. Press well with spoon to settle the filling firmly inside . Keep all the prepared eggs aside. Now prepare a medium thick batter in a bowl using all purpose flour, water and salt. Into this batter, place one egg with the yolk side up . To keep the filling undisturbed, pour the batter slowly over the top of this egg using a spoon such that it is completely covered as in below figure.



Follow same with remaining eggs. Now heat oil in a wok and using a large spoon put these eggs into the oil and deep fry them with golden brown on both sides.
