Basic Vegetable Pulao


Veg Pulao with Paneer, Capsicum, Carrot and French Beans
              Pulao, a vegetarian healthy meal is a favorite among the North Indians. Prepared in different varieties, this recipe is the most basic and easy one. Here, I prepared by cooking rice together with vegetables. You can also prepare by adding precooked rice into the veggies which will give another outcome. However, this is quite easy and if you learn this basic one, you can think of taking other routes with different ingredients!                        .

Ingredients:

  1. Basmati Rice : 2 cups (Soak for 20 mins and drained)
  2. Medium Onion sliced thinly : 1 or 2 
  3. Vegetables (Carrot, French beans or Green Peas, Cottage Cheese Cubes or Cauliflower florets ) : 1 cup ; carrot and french beans chopped )
  4. Ghee : 1 or 2 tbsp
  5. Oil : 2 tsp
  6. Cinnamon Sticks : 11/2 inch
  7. Cardamom pods: 2-3
  8. Bay leaf : 1
  9. Cloves : 6-7
  10. Salt : to taste
  11. Water : 4 cups (3 cups for rice and 1 cup for cooking veggies; see note )  

Method :

  1. Place water to boil. Switch off flame when it boils and cover it.
  2. In a pan with hot oil, fry Paneer till all sides turn golden brown
  3. Meanwhile in a large wok heat ghee and oil. Put the spices from 6 to 9
  4. Put onion and saute till it turns pinkish. Now add all vegetables to this and mix well.
  5. Into this put soaked & drained rice . Add salt and check saltiness at this point as you cannot add later
  6. Pout the hot water leaving 1/4 glass behind. This is to prevent rice from overcooking or mushy. Cover with lid and cook. After 8-10 min, check whether rice is cooked. If all the water is dried out and still rice is not c\Oooked, add remaining water and cook covered.
  7. Pulao is ready to be served with Raita or any veg curries

Note :

  • For cooking vegetables , you dont need more water. So take care not to make whole  pulao very mushy. You can prepare pulao by adding precooked rice also like we do for Fried rice. This also prevents mushiness of pulao
