Saffron Chicken


Saffron Chicken


This is a combination of two recipes by combining its interesting steps and ingredients. So far it came out well with a unique smell and taste. 


Ingredients :

  • 1/2 kg boneless chicken
  • Saffron strands : 3-4 as per quality
  • 1/2 cup milk
  • Oil : 3-4 tbsp for frying ; 2 tbsp for preparing gravy
  • 1/2 tsp cumin seeds
  • A pinch of asafoetida
  • 1 cup of water

For marination :

  • 4 red chillies
  • 10-12 cashew nuts or 1/4 cup fresh cream 
  • 2 cardamom pods
  • 2 inch cinnamon stick
  • 5-6 cloves
  • 3-4 black pepper
  • 1/2 tsp fennel seeds
  • Nearly 2 tbsp red chilli powder
  • 1/4 tsp turmeric powder
  • 2 tbsp coriander seeds ( I used coriander powder as it was not in stock )
  • Salt
  • 1-2 cup curd


Method :

  1. Wash and clean the chicken pieces
  2. Heat milk and add saffron into this after removing from flame. Keep aside 
  3. In a pan dry roast ingredients mentioned under marination except curd. Remove from flame when a good smell is released 
  4. In a grinder blend these to a fine powder . 
  5. Pour this into a bowl and add curd to this. Check salt. 
  6. Marinate chicken in this batter and refrigerate for 15-20 min. 
  7. Heat oil in a pan and fry these chicken (by removing excess curd) until they are Half cooked. Keep them aside.   
  8. In the same pan with oil (remove excess oil and leave just 1-2 tbsp), add cumin seeds and later on asafoetida. [ in my pic, I had forgotten to remove this excess oil; so don't panic ] 
  9. Add the left over batter that was prepared for marination. Cook for few minutes until oil is separated. 
  10. Add chicken pieces into this along with water. Let this cook until it thickens. Check salt.     
  11. Add saffron milk into this and switch off flame after few minutes. Serve with any rotis or chappathis
